WHere is an easy version of a beverage featured on a new cocktail list. It's a large-volume premix that is packed with the tastes associated with Christmas time, rendering it perfect for your festive gathering. Reserve the remaining cordial for brunch beverages, sweets, or to make another batch of this cocktail.
Bikini
Makes enough for 10 servings
To make the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Syrup: Put all the components into a saucepan, heat until it reaches a simmer, mixing until the sugar dissolves. After that, take off the heat and let it to reach room temperature completely. Transfer into an sealable bottle, seal keeping it in the fridge, where it will keep for around one month.
To make Batch Mix: Mix all the spirits and syrup in a sizeable container, leave to sit for one hour, then filter it preferably using muslin, so it's fully clarified.
For serving: Add 85ml of the premix into a mixing glass packed with ice, gently stirring carefully for one minute to chill. Strain into a chilled martini glass or equivalent, garnish with a few cranberries and finish using a quick spritz with the mandarin essence over the drink.
